Flourless Chocolate Cake

 

My wife has a glutten sensitivity.  When I was on a buisness trip I got served a flourless chocolate cake.  I went online and found Whole Foods had posted their recipe.  It's REALLY good.

 

Now sometimes we make them half thickness (which means a shorter cook time).  I like adding walnuts and chocolate chunks.

 

Ingredients

12 ounces (2 cups) bittersweet chocolate chips

1 cup (2 sticks) plus 3 tbs butter

1 ¼ cups sugar

6 eggs

1 cup unsweetened cocoa powder

1 tbs milk

1 tbs honey

¼ tsp gluten free vanilla

 

  1. Preheat oven to 375
  2. Spray 9” glass pan with oil spray, then line it with parchment paper and spray the paper to
  3. Heat 1 1/3 cup chocolate and 2 sticks of butter and blend, don’t over heat the chocolate
  4. Remove from heat and add sugar, eggs and cocoa powder and mix.
  5. Pour into pan and bake. Check after 28 minutes but should need a little more time.  Should just have a crust and not stick to the tines of a fork.  Pull out and let cool.
  6. Make the glaze by melting 2/3 cups chocolate, 3 tbs butter together as before.
  7. Remove from heat and add milk, honey and vanilla
  8. Glaze cake and refrigerate
